Bites On Rosemary Skewers
Ingredients2 (6oz)Swordfish Steaks
3tbsp. lemon juice
3tbsp. olive oil(divided)
2 cloves garlic,minced
2tsp. chopped fresh rosemary
1 1/2tsp. lemon pepper
1tsp. salt
12-15 rosemary stems(about 5 inches each)
Cooking Instructions- Cut
swordfish steaks in 1-inch cubes, Place in large resealable plastic
bag; add lemon juice, 2tbsp of the oil, garlic, chopped rosemary, lemon
pepper and salt. Seal bag, turn to coat and refrigerate 1 hour.
- In
skillet, heat remaining 1 tbsp of the oil and butter over medium heat.
Remove swordfish from marinade and place in skillet, discard marinade.
Cook 6 to 8 minutes, turning to brown on all sides. Remove from heat;
let cool.
- Remove rosemary leaves from bottom three inches of
stems. Cut stems at angle and thread 2-3 swordfish cubes onto each
rosemary skewer and serve immediately. And take delight in this
swordfish recipe.
