Garlic Roughy with Peppercorns




orange roughyThis orange roughy recipe is great for a romantic dinner. Unlike some fish recipes it is not over filling and is fairly simple to cook. I personally enjoy it because it's not one of your typical recipes from friends.

It is unique in the fact that the orange roughy fish, sometimes called deep sea perch, is mostly found in the deep cold waters
(700 fathoms) of New Zealand and Australia. It is only with the use of high technology that the fish can be located and caught. With its main fishing season being from June to August, during the spawning season. The orange roughy is notable for its extraordinary lifespan — a recorded maximum of 149 years.

Its firm, white flesh and delicate shellfish-like flavor have made it highly popular around the world. The carcass and skin are rich in oil which helps it to retain moisture when cooking.

One of the best romantic dinner ideas is to have something different. You will not find this fish in all stores on a normal basis so why not treat your loved one to a special treat they will not have year round!

Garlic Orange Roughy Recipe with Peppercorns

Ingredients

4 orange roughy fillets (thaw if frozen)
1/4 cup soy sauce
2 tbsp. fresh lemon juice
2 large cloves garlic, minced
2 tsp. sugar
1 tsp. grated ginger root or 1/4 tsp. ground ginger
1 tbsp. mixed peppercorns, crushed
Lemon wedges and parsley sprigs for garnish (optional)

Cooking Instructions

  1. Place fish in single layer in glass baking dish. Combine soy sauce,lemon juice, garlic, sugar, and ginger; blend well. Pour over fillets; cover and refrigerate at least 30 minutes

  2. Preheat broiler. Remove fillets from marinade; discard marinade. Sprinkle crushed peppercorns evenly over fish, pressing peppercorns into fish to adhere to surface.

  3. Spray broiler pan with nonstick cooking spray. Arrange fillets on pan. Broil about 5 inches from heat 8 minutes or until fish flakes with a fork.

  4. Serve garnished with lemon wedges and parsley, if desired.

Entire meal takes about 8 minutes to cook!
